I have a 2.5" RC spacer lift and planning 295\70\17 Trail Grapplers on my stock Rubicon wheels. Anyone running these with wheel spacers? Since they're a bit thinner than 12.5 tires, I'm thinking I should only run a 1" spacer to put the sidewall right at or just beyond the flare?

Most aftermarket wheel spacers that are safe to use are 1.5" spacers. I think it'll look perfect with those.

I personally prefer Spidertrax, that's what I have on mine.
