question about wheels and tires...

so, can someone tell me why many manufacturers say their tires have to be mounted on 8.5 or bigger width wheels, but most on here are able to mount their oversize tires on 8 inch wheels? I have been looking at rock crawlers and new tires for the past few days, and I was looking at 15x10, but I notice that wtf_lol and redrockjk both have 35s, whose manufacturers recommend to be mounted on 8.5 inch wide wheels and better mounted on 8 inch wheels. What are the drawbacks to this, and am I going to have difficulty getting my tire shop to do this for me for any reason? Thanks for helping me out. I had posted this in another thread, but I think it got lost in the shuffle, so I made my own thread...
