The electronic stability features will still work.
Is it less inherently safe than with the old tires? Probably. It will sit a bit higher, larger tires are more work for the brakes, etc. Depending on what model tires you came from and what you now have it may be better or worse in the rain and snow.
However, the difference is likely very small. The difference in inherent safety between your old and new tires is likely much smaller than the difference between the Jeep and say, a Honda Civic. In other words, if you trust your daughter in your Wrangler, I wouldn't worry too much about the small difference in those tires (unless they are just terrible road tires or something). If she's a careful, attentive, defensive driver, she'll probably be fine either way. On the other hand, if she's as likely to park the Jeep in a ditch as she is in the driveway, the tires probably won't help/hurt much.
