So I've never taken an Automatic off-roading...anything special I need to know? Do I just put it in 4-hi and DRIVE and then take it as i would in a manual or accutlaly use 1st and 2nd gear?

Just drive. When you are climbing an obstacle, or doing a water crossing or whatever, you can drop down to second or first to make sure you stay in a lower gear if need be.
