2012 JKU Rubicon Heating/cooling issues

I just purchased a used 2012 JKU rubicon MW3 edition. I traded in my 11 JK for it since i hate the 3.8 engine. However, i've ran into an issue; while driving my coolant temperature drops to about the 1/4 mark and just below it. If I let the jeep idle it will reach normal temperatures at the 1/2 way mark and doesn't appear to have any signs of overheating. On the other hand, while driving, it drops below and the temperature of the heat drops as well to just warm.

I've came up with three possibilities: Air pocket, Coolant temp sensor, thermostat stuck open. The dealership informed me the thermostat was just replaced but they think it's just an air pocket. I've tried burping it to no avail....any advice would be kindly appreciated.

FYI the temperature of where I live in Alaska is about 7 degrees - 24 degrees

ask your dealer . why did you replaced. the thermostat . and you will get your answer. check if the former owner did not fit any coolers on your heater lines . I have and it does this.
